This promises to be a taste journey like no other where cheesemonger Kat Harvey collaborates closely with Dayron Concepcion from Tweed River House for Savour the Tweed
Under the thoughtful eye of Executive Chef Dayron Concepcion, the curated 6 course menu will honour the flavours, botanicals and agricultural creativity of the Tweed while drawing inspiration from culinary French Basque delights. Each course will be influenced by a distinctive French cheese, handpicked by Kat and woven seamlessly into the dish to create a unique expression of character, texture, personality and terroir.
Throughout the lunch, Kat will share the stories, makers and traditions behind each cheese, offering guests an immersive and unforgettable culinary experience.
Booking times are NSW daylight savings (1 hr ahead of QLD)

Stargazing Dinner Experience
Introducing an extraordinary stargazing experience with Astrophysicist, Dimitri Douchin.
During this experience, you will discover the mesmerising night skies of the North Coast whilst delighting in a 3 course long table dinner on the River Verandah.
You will experience an out-of-this-world journey to space led by Astrophysicist and TedX speaker Dimitri. The award-winning Stargazing experience includes naked-eye astronomy, laser-guided constellation storytelling, and state-of-the-art telescope viewing.
Cost $175pp includes 3 course dinner and stargazing experience and talk. Ticket is non refundable

BOOKING TERMS & WEATHER POLICY
Event starts at 6pm sharp with 3 course dinner followed by sunset talk then stargazing. Event will end around 845pm
We require a minimum of 15 guests for the evening to proceed. If we do not reach this we will refund you. Ticket is non refundable after purchase but can be transferred to another.
In event of cloud cover or rain, we will run an indoor immersive guided exploration of the Universe, exploring the celestial dance of planets, stars and galaxies, using our astronomy software.
You'll learn how to identify stars and constellations seen through the lens of different cultures and civilisations. If the sky clears up, we will take the opportunity to do some laser-guided constellation storytelling outside under the stars.
Dr Dimitri Douchin our astrophysicist and TEDx speaker will deliver a captivating chat about the latest breakthroughs in astrophysics, his current research in cultural astronomy working with local Aboriginal communities, dark sky preservation and how the human experience of looking into the sky is universal and fascinating.
